Fried only on one side. Used of eggs.
煎蛋(太陽蛋，只煎一面)

over easy:
pertaining to an egg that is flipped when the white is nearly cooked and fried on the other side, with the
yolk still being somewhat liquid; also written over-easy
荷包蛋，兩面都要煎，蛋黃還要嫩嫩的，能流動

over medium 兩面都煎兩面都煎，蛋黃剛好凝固

over hard /over-hard 兩面都要煎，蛋黃要煎老些(硬)

hard-cooked egg 全熟水煮蛋(蛋黃全熟)
soft-cooked egg半熟水煮蛋（蛋黃軟的）
